A stability study on shelf life of mulberry juice in Malaysian SMEs' (small medium enterprise)

Abstract

Mulberry is a nutritious and delicious fruit that undergoes rapid commercialization nowadays. Its nutritional value can make people love to consume it. Malaysia is one of the countries that take the opportunity to enhance the entrepreneur to make the product from mulberry marketable. This research is carried out to investigate the stability study on shelf life of Mulberry Juice from De Mulberry Jam Enterprise. The observation of product storage was conducted from 6 months to one year. The laboratory testing has been conducted to confirm the stability study on shelf life of the mulberry juice. The samples were collected randomly from the company and have been tested for total dietary fibre, total calories which cover up the content of (energy, protein, fat, moisture, ash and carbohydrates), pH value and microbial growth. The presences of natural preservatives also have been checked. All the empirical data were compare to the commercial labels of food product under acceptance level of FDA. The results as stated in table 2 shows that the mulberry juice were safe to consume and still retaining its quality and sensory properties and have fewer total plate count which is 1 CFU/ml. Hence, shelf life of mulberry juice produce from De Mulberry Jam Enterprise can be prolonged from 6 months to 1 year.
